做法:洗(xǐ )净(jìng )宰好(hǎo )鲫(jì )鱼,洗净淮(huái )山和薏(yì )米。用(yòng )清水(shuǐ )把(bǎ )陈皮(pí )泡软,拍(pāi )裂(liè )一小块姜,热锅,用姜块(kuài )在锅上(shàng )擦一遍,放两勺油,待油六成热下(xià )鱼(yú ),煎至微黄(huáng )。煮沸瓦(wǎ )煲(bāo )里的清(qīng )水(shuǐ ),放(fàng )入煎煮好的(de )鲫鱼和(hé )其他材料,武(wǔ )火煮沸,转(zhuǎn )中小火煲一(yī )个半(bàn )小时,下盐(yán )调味即可品尝。
