做法:洗净宰好鲫鱼,洗净淮山和薏米(mǐ )。用(yòng )清水把(bǎ )陈皮(pí )泡软,拍裂一(yī )小(xiǎo )块姜,热锅,用姜块在锅上(shàng )擦(cā )一遍,放(fàng )两勺(sháo )油(yóu ),待油(yóu )六(liù )成(chéng )热(rè )下鱼(yú ),煎至微黄。煮沸瓦煲(bāo )里(lǐ )的清水(shuǐ ),放(fàng )入煎(jiān )煮好的鲫鱼和(hé )其他(tā )材料,武火(huǒ )煮沸(fèi ),转中小火煲一个半小(xiǎo )时(shí ),下盐调味即(jí )可(kě )品尝。
